Choosing a Cafe Chair
Before you buy a cafe/bistro chair you need to consider how comfortable you want the chair and how long do you want people to typically sit on your cafe chair.  This will narrow down your search; for comfort you would want an upholstered seat and possibly an upholstered back and if you need to keep people moving a complete wood cafe chair would be both durable and not overly comfortable.

Pick a Style
Next you would need to consider style, you want it to look good and reflect your style, consider also that you will be choosing from a large variety of styles, materials, colours and brands. Do you want a traditional cafe chair or do you want a more contemporary dining chair. There are open back bistro chairs and there are chairs with a solid back, both upholstered or in metal, wood or polypropylene.  Look at the angles that make up the back, legs, arms and seats and determine what will look good in your room around a table.  A small space might call for a delicate cafe chair whilst a larger space might be better with a more defined shape.

With or Without Arms
You need to not only consider the comfort but also your customer.  If the typical customer of your cafe is older, arms on a cafe chair help in getting them in and out of the seat.

If you are short of space cafe chairs without arms visually as well as actually take up less space.

Select the Material
The material of your bistro chair is important and it determines the look and feel:-
Wood is versatile and you can choose from both traditional and contemporary.
Polypropylene can look good in a modern or small space.
Metal has become more popular over this last year and comes in an array of Colours.
Upholstered cafe chairs can provide an opportunity to use colour and patterns for a richer effect.
Rattan or wicker bistro chairs provide both texture and style.

Do not forget that you can use a mixture of styles and materials.

Quality
Most importantly you need to make sure that the dining chair you select will be durable and will look as good in 5 years time, it is a big commitment and you need to make sure that you make the right choice.  You need a contract quality chair with a contract quality finish.  Ask your supplier their advise for your application.
